Ingredients
4 ears fresh corn on the cob
1 red bell pepper
1 orange bell pepper
1 english cucumber
1/2 bunch radishes
1/2 cup minced red onion
Fresh thyme sprig
1/4 cup fresh parsley minced
1/4 cup extra virgin olive oil
1/2 tsp cayenne
1 tsp onion powder
2 tsp garlic powder
2 tsp dried oregano, I prefer oregano from mexico
Instructions
For the corn:
Bring a pot of water to a boil with a tablespoon of sugar, add corn and cook for about 20 minutes, drain and set aside.
For the vegetables:
Dice the peppers, the cucumber and the radishes, cut the corn kernels from the cob and mix all together with the minced onions and parsley. In a separate bowl combine olive oil, oregano, cayenne, onion and garlic powders, mix well and toss with vegetables.
I like it to sit for a day before serving so the flavors can get happy together. You can also change it up with and summer vegetable and even add a little mayonnaise, the combinations are endless. Enjoy!!
