Directions
Ingredients:
3 medium/large yellow squash, sliced 1/4″ slices
1/2 medium onion sliced thin
4 cloves garlic, minced
2 Tbsp. olive oil, plus extra for pan
lemon pepper to taste
1 1/2 cups fresh grated pecorino cheese
1 1/4 cups heavy cream
1 tbs fresh chives, finely chopped
Instructions:
Preheat oven to 350
In a small oblong baking dish approximately 11 x 7 coat the bottom and sides with olive oil.
Saute the onion and garlic in the 2 tbsp of olive oil untl translucent, set aside.
Layer 1/3 of the sliced squash on bottom of prepared casserole dish, sprinkle with lemon pepper, add 1/2 of the onion, garlic mixture evenly on top, then add 1/3 of the cream, then 1/2 cup of the pecorino cheese, repeat the second layer the same way. On the final layer, add squash, lemon pepper, remaining cream and cheese. bake in the oven 30 minutes or until golden brown. Garnish with chopped chives and serve.
This meal was served with sauteed chicken thighs and wild rice, but it is delicious by itself with some crusty bread! Enjoy!!
