Shrimp with Garlic Mashed Potatoes

This is my go to comfort food, creamy mashed potatos with garlic and perfectly flavored carmelized shrimp.

Ingredients

For the Shrimp
1/2 lb large shrimp, shelled and deveined
1 Tbs worcestershire sauce
1 tbs ketchup
1 tsp sugar
juice of 1/2 small lemon
2 cloves of finely minced garlic
salt and pepper to taste

For the potatoes
2 large russett potatoes
1 head of garlic
1 tbs. olive oil
1/4 cup butter
1/4 cup whole milk
salt & pepper to taste

Directions

Mix all of the shrimp ingredients together and marinate at least 30 minutes and up to 2 hours.

Slice the small end off the garlic, sprinkle with olive oil, wrap in aluminum foil and bake at 300 for 60 minutes.
Peel the potatoes, place in a saucepan with water until completely covered and cook on medium heat until tender, about 25 minutes.
When done, drain the potatoes and return to the pan, squeeze the roasted garlic into the potatoes then add the butter incorporating completely, add the milk, salt & pepper to taste, blend with a mixer until creamy. Set aside covered while making the shrimp.

Drain the shrimp. Pre heat a cast iron skillet, or heavy bottomed skillet on medium high heat until hot, throw in the shrimp and cook until just beginning to char, remove and serve immediately. Enjoy!!
