Quick And Easy Pork Chop Dinner

A tasty dinner in about 30 minutes!


Delicious, simple and quick meal for those busy weeknights

For the Pork Chops:

2 bone-in pork chops

2 tbs. jerk seasoning, or any rub you prefer

2 tbs olive oil

cast iron pan or heavy bottom skillet


For the Zucchini:

2 medium zucchini, sliced in 1/4″ rounds

2 tbs olive oil

1 tsp. lemon pepper

1/2 cup freshly grated parmesan cheese.

small oblong casserole dish


For the Noodles:

3 cups egg noodles

water to cover

a dash of salt and olive oil for the water

3 tbs unsalted butter

pepper to taste

medium saucepan




Preheat oven to 350


For the pork chops, place seasoning of choice on both sides and set aside.

For the zucchini, toss the zucchini, olive oil and lemon pepper together in casserole dish and bake 20 minutes.

While the zucchini is in the oven, start the water boiling for noodles, add the olive oil and salt, cook according to package directions.  Drain, saving 1/4 cup of the pasta water in saucepan, return to the stove, add the butter and pepper to taste, once melted return the noodles to the pan, stir and let sit covered until the remaining meal is done.

When the timer goes off for the zucchini, start heating the cast iron pan on medium high heat.

Remove zucchini from oven and top with the parmesan cheese, return to oven for 5 more minutes until slighlty browned on top.

In the meantime, place chops in hot skillet and cook until lightly browned on both sides about 4 minutes each side,  remove from heat and let sit for 5 minutes before serving.
