1/4 lb. bacon diced
1 lb. fresh, trimmed green beans
1 cup water
salt and pepper to taste
2 green onions, chopped
2 young potatoes, peeled and diced.
Lightly brown the bacon in a large skillet, add the green beans, salt, pepper and water. Cook for a few minutes, then add the green onions and potatoes. Cook covered on medium heat for 30 minutes, do not overcook the vegetables! Ladle into saucebowls and serve immediately. This was so suprisingly good!
