Mac and Cheese with Sausage and jalapenos

Ingredients
Preheat oven to 350
Prepare casserole dish with cooking spray

1/2 lb. elbow macaroni
4 Tbs unsalted butter
1/4 all purpose flour
2 1/4 cups whole milk
2 cups sausage,of your choice, chopped
2 cups freshly grated sharp cheddar cheese
1/2 cup minced red onion
1 tbs minced garlic, about 4 cloves
1 tbs yellow mustard
1/4 chopped canned jalapenos
salt & pepper to taste
optional:
1/4 cup chopped green onion
1/2 panko crumbs

Instructions

Cook macaroni according to package directions, drain and set aside.

In a large heavy bottomed pot melt butter on medium low heat, add chopped sausage, saute until it releases juices and starts to brown, remove with a slotted spoon and set aside. Add minced onion and garlic to pan and saute until the onion is translucent, add flour, stir to combine then add the milk, turn the heat up to medium high, stirring constantly until thickened and smooth, about 10 minutes. Add jalapenos, mustard, the cheese and macaroni to the pot, strring until just mixed. Pour mixture into prepared pan and sprinkle with panko crumbs and green onions. Bake 30 minutes. Let stand for 5 minutes before serving, its going to be hot! Enjoy!!
