The spices from The Spice & Tea Exchange are amazing, but you are welcome to use whatever blend is available to you or make your own.
6-8 boneless chicken thighs
1/4 cup dark brown sugar
5 garlic cloves, minced
4″ piece of ginger, peeled and chopped
1 tbs soy sauce
1 tbs Sweet Heat Spice Blend
1/2 tsp cayenne pepper
Combine all ingredients in a food processor and process until finely ground. Rub on the chicken pieces and marinate over night.
The following day, either fire up your grill, turn on the bbq or you can use your broiler
2 tbs water
1/2 cup dark brown sugar
3 tbs soy sauce
1/3 cup tomato paste
6 1/2 tbs Jamaican Jerk Spice Blend
1 lime, juiced
Combine all ingredients, coat the marinated chicken. Either bbq or grill to your until charred and crisp approximately 15-20 minutes. I like to serve with a vegetable and rice cooked with lots of garlic and a little butter.
