Grilled Chicken Salad

For the Chicken:
4 skinless boneless chicken thighs
1 tsp. garlic powder
salt & pepper to taste

For the Salad:
1 head romaine lettuce
1 carrot shredded
1/2 cup shredded red cabbage
1/2 cup sliced radishes

Lemon Garlic Dijon dressing:

1 Tbs fresh lemon juice
1/2 tsp dijon mustard
1 garlic clove, finely minced
1/4 tsp pepper
1/8 tsp sea salt
3 tbs. olive oil


Season the chicken thighs and grill on outdoor grill or in cast iron pan until done, about 20-30 minutes depending on size. Set aside, and keep warm.

Rinse and dry the Romaine thoroughly and tear into small pieces, mix with carrots and red cabbage in a large bowl, set aside in fridge.

Mix all dressing ingredients together, set aside in the fridge.

At serving time, toss the dressing with the salad ingredients add sliced radishes and cut up chicken on top. Enjoy!!
