Great dish for throwing together any kind of vegetables you have on hand

For this recipe I used 4 strips of bacon, chopped and fried until browned, using the bacon grease for my fat, but you can use butter in its place for a vegetarian version.  I happened to have a farm fresh potato and green beans on hand so that is what I used here, but you can use what you have on hand.


left over bacon grease or 3 Tbsp butter

1/2 small onion chopped

1 1/2 cups corn, either canned, frozen or off the cob

1 cup chopped fresh green beans

1 medium potato, chopped

1/2 cup water

3 eggs, beaten



Saute the onion in the bacon grease or butter in a large skillet, add potatoes to brown, then the remaining vegetables, pour the water in, cover and simmer for 20 minutes until potatoes are tender and water has evaporated.   Stir in the eggs and bacon if using and cook until the eggs are done,  garnish with some fresh herbs and serve.
