Classic Buttermilk Pancakes

Always brings back memories of my Dad making pancakes on Sunday mornings, plus they are delicious!

  • Medium




1 tsp salt

1 tsp baking powder

2 tsp baking soda

2 tbs granulated sugar

2 cups sifted all purpose flour

2 eggs, separated

2 tbs melted butter

1 tsp vanilla

2 cups buttermilk

butter for greasing the pan

Pre heat your griddle or preferably a cast iron pan to a medium to medium high heat while preparing the ingredients.


In a large bowl whisk together the dry ingredients, salt, baking powder, baking soda and sifted flour.

Separate the eggs.  Beat the egg whites with the 2 Tbs. sugar until stiff.  Combine the egg yolks with the vanilla, melted butter and buttermilk.  Make a well in the dry ingredients, add liquid ingredients and mix until just combined, fold in beaten egg whites.

The first one should be a tester, to make sure the pan is at the proper temp.  Coat the pan with butter and put a small ladle of batter onto pan,  cook until lots of tiny bubbles form, if its golden brown, your temperature is perfect, adjust accordingly, cook other side until golden brown.  Serve with warmed syrup, melted butter and some fruit or bacon and sausage.  YUM
