These lemon bars are family favorite.
For better results with the crust I prefer to use and heavy metal pan or my LeCreuset rather than glass.
spray pan with baking spray
preheat oven to 350
1 cup flour
1/2 cup melted butter
1/4 cup powdered sugar
mix all crust ingredients together in medium size bowl, press into 8″ pan.
bake 20 minutes
2 beaten eggs, unless otherwise stated I always use large.
1 cup sugar
3 tablespoons lemon juice
2 tablespoons flour
1/2 teaspoon baking powder
mix all filling ingredients together in medium size bowl and pour over baked crust
bake 25 minutes
cool, sprinkle powdered sugar on top and cut into squares
recipe may be doubled, use a 13x9x2 pan.
