Delicious Curry with Bacon and Eggs! So Good!

This recipe comes from my sisters mother in law, and she has a lot of great recipes! I call it americanized because, I doubt you get bacon and eggs served with curry anywhere else but the united states.

Ingredients

6 strips of bacon chopped and cooked until crispy, drained and set aside, reserving 1/4 of bacon grease
1 onion, chopped
1/4 cup flour
1 tbs S&B oriental curry powder
2 1/2 cups chicken stock
Salt & pepper to taste
2 cups cooked and cubed chicken
4 cups cooked white rice

condiments
you can use any combination of these

crispy bacon bits
4 hard boiled eggs, peeled and chopped
roasted, salted peanuts
coconut
raisins
chutney

Directions

Saute the onion in the bacon grease until translucent, add the flour and curry powder stirring to coat the onion, add the chicken stock slowly and cook stirring until thickened, salt and pepper to taste, simmer about 30 minutes, to get the flavors to meld, add the chicken and cook 10 more minutes. Serve immediately over rice with any of the condiments that are to your liking. Enjoy!!
